How much do I lose choosing 32mm over the 42mm SF?

Mainly low-light performance. The 42mm gathers roughly 1.7x more light, so it holds detail better at dawn, dusk and in dense woodland. In good light the 32mm is very close optically, and it is several hundred grams lighter - which is why many birders carry a 32mm as their walking binocular.

Is 10x too shaky for handheld use?

10x is more demanding than 8x, but the SF's rearward weight balance makes it steadier than most 10x binoculars. If you have unsteady hands or want a wider view for scanning, the 8x32 is the easier binocular to live with.
